The colors of the Amarok in the screenshot look really nice. I dont know if somebody just changed the colors or a new theme, but I tried a lot and only made mine look worse.

First of all, the above screenshot was made with KDE, which generally looks prettier than Gnome overall. So you might try switching to that.
Secondly, Amarok actually uses KDE's system colors. So to change Amarok's color scheme, you need to change the KDE color scheme in KControl or SystemSettings.

Yep, exactly what I did, I used Kcontrol, and it looks the same minus the kwin borders. But this forum isnt about KDE. Gnome is my preference. Linux is about freedom and freedom of choice.
