I start a new Krita file, draw something, select everything (C+ A), then press (Del), the canvas turns transparent, although I was able to draw on it.

This didn't happen yesterday, not sure what I messed up. How can I set it to be the white background always?

You probably made a single layer only, try making two layers in the new image dialogue, the lowest will be filled with white. You can also try having it as canvas colour(also in new image), but you will need to make sure to pick white as the fill-in color for transparency on export then.
