All paint/art applications that I use have a straight line 'lock' key using a brush.. shift in Photoshop etc to bind the brush to the axis you start to paint in ... I can't find one in Krita and it's annoying me

Yes you are missing the straight line tool just below the brush tool. also there is a shortcut 'V' to activate the straight lines while using freehand brush tool.
you can change these shortcuts too.
