This seems to be undocumented - only reference I can find is to the Stroke/Fill dock which is now deprecated.

I've looked everywhere please help!

Once you enter the text on the canvas, look on the right side.

Under Tool Options dock, you will find the text settings options.

Thanks!

Only issue is - I don't have the Tool Options dock... I also don't see that particular dock in the dockers list. I looked at all the docker windows and could not find it. Is there some other way of getting the Tool Options window?

If you are using the default workspace(workspace = docker layout), Tool Options docker is somewhat hidden in tab with Layers docker.
It's possible you can't see its full name in the tab, but it's shortened name, depending on the tab width.

I have looked closely and the layer/channel dock does not have a tool options tab even when expanded

I did open and close all the docks - after going thru them all no luck.

Is there an easy way to reset the default interface?

Rightmost button on the toolbar is the workspace switcher. Click it to change or pick the default workspace.
