What's the name of the brush wheel that shows when you press mouse 2? I would like to bind it to keyboard since my tablet pen's buttons are awkward to use.

You can change it in the Settings under Canvas Input settings and then Popup palette.

I think you refer to the "Pop-up Palette" (where you select colors and brush presets), in Settings > Configure Krita > Canvas Input Settings > Show Popup Palette there you can switch or add keyboard key, (I have it on space bar besides "right click" for example) : )
