The grid and guides always appear above the artwork (as far as I can tell) because it's their purpose, to be visible and act as a reference and snap facility for you. If you find that they're a distraction from judging how your intermediate work appears, you can turn them off by unticking Show Grid/Guides until you want to use them again.
