Is there a way to specify the exact coordinates for points when using the edit shapes tool? This would be very helpful!

Apparently not. The cursor location on the staus bar can be used to give a good idea of position and size but it tells you the cursor position and the cursor can 'capture' a point over a range of locations, so this is not accurate to 1 pixel if you're considering vector point location and manual movement.
