I'm using Krita and accidentally clicked on one of these arrows just outside my 'workspace' area. My canvas is now larger than the ref pic and actual image I was working on. Undo hotkeys or buttons will not reverse and resizing my canvas seemed to resize it in a way where my entire image was cut off. This is my first post so forgive me if I did something wrong. I would put an image in my post but I have no idea how to add one??

You can always use the crop tool to cut off the unwanted bit.

That's weird, undo should just work for that.

In any case, you can always use the crop tool (it's right of the move tool in the toolbox) to cut away parts of the image you don't need.

The CROP TOOL OF COURSE. Such a simple answer. Thank you.
