Config file for default file associations

Notepad is bound to most file types that don't have the proper application installed yet (for example dia), and also to text files. Instead of going through each file type and remove notepad, I would like to use a text editor to search and replace notepad in most occurences in the appropriate config file. Anyone knows where this file could be ? couldn't find relevant results with find :

EDIT : I found a file

, but there's no occurence of notepad there, so the association must be elsewhere.

What when you try "inotifywait -r -m -e modify <folder>" on ~/.config, ~/.local, /usr/share, ... and watch which file is modified when you change the file type association ("kcmshell5 filetypes") ?
