I use a mix of the breeze light global theme and the aritim dark theme for titlebars an panel, and some of the text in widgets (such as the date in the calendar widget and my user in the application launcher) is way to dark and unreadable. Is there a way to edit the text color used in the panel and widgets?

This depends on how the Plasmoid/Plasma Applet is written. It is always possible to force some colors changing the (qml-)sourcecode. A better approach would be to analyze which colors do not match and change them in the theme settings as the applets use these colors to display their content.
