So if I right click on a file and choose 'Open With' a list of applications is listed. I need to edit this list as I have a duplicate entry and some irrelevant ones in there. How do I do this?

'/usr/share/applications' for the list of applications that are managed by your package manager, and '/home/<username>/.local/share/applications/' for application shortcuts that you added yourself.
