Using openSUSE so you terminology may be slightly different . . .
Go "Configure Desktop", go to the "Advanced Tab". Select "File Associations". Search for file type pdf, select the acroread entry in the "Application Preference Order" window and then click on delete. Finally click on apply to update your system settings.

Note: "Configure Desktop" is called "System Settings" in most distros.
