System Settings -> Keyboard & Mouse -> Global Keyboard Shortcuts -> KDE component: KWin -> Show Desktop (in the list).

You mean to open your home directory etc.?

If you want more advanced control, you can use System Settings -> Input Actions. For basic things such as launching applications, you can do it in KDE Menu Editor. Right click on the application launcher icon ("start menu") in the panel -> Menu Editor, or press Alt+F2, type 'kmenuedit' and hit Enter.

In the editor, select an application in the list to the left (e.g. System -> Dolphin (File Manager)). Go to the "Advanced" tab and assign a shortcut key. Save.

I don't know why, but for some these shortcuts are disabled by default. If it doesn't work, go to System Settings -> Input Actions and enable (check the checkbox) the item KMenuEdit.
