Editing the menu -> why does KDE change my settings?

After using the menu editor, I moved folders, created new ones, changed names and icons... for instance, "Office" became "Production" and held only programs I commonly use.

After I'm done, I see that my changes only stick "partially". Some of the items I added persist, others are moved to another location (not intended) and new folders show up out of nowhere.
There is a new folder called "Office-3". Some new folders I made for specific applications got moved as subfolders of "Graphics".

Apparently, the KDE menu has some sort of "artificial intelligence" that acts as if it knew better than I do, what is best, what should stay and what should go...

How can I disable this "feature".
