Is it possible to set up KDE so I can stream video files to my XBox 360? How would I go about doing this?

Assuming that it supports the UPnP Media protocol, then you should be able to use the appropriate server such as Mediatomb.

Depends on the servers operating system, something like Mediatomb works well for Linux based systems.
