If you reboot, is the file libGL.so.1 regenetated?
If so, does simply moving libGL.so.1 fix the issue? ( ie. don't run nvidia-xconfig afterwards )

Is the version of the NVidia drivers installed 180.29?

No, it didn't get recreated on reboot, seems like it just gets created sometimes (???), no clue when tho, driver version is: 195.36.24

According to my Googling, the string after libGL.so should be the driver version ( so yours should be libGL.so.195.36.24 ). Please check your NVidia driver installation.
