I don't have a language selection in my spellchecker settings in the "Default Language" section. It's just an empty field. Why? How to set up spell checking?

Maybe you are missing dictionaries?
Afaiks Calligra uses hunspell on linux so you need to have dictionaries for the languages you want to spellcheck.

E.g: To get danish nn my neon system:
sudo apt install hunspell-da

(I have freeBSD OS)
and everything worked.
