How do you tell which Authentication (PLAIN, clear text, LOGIN, etc.) are offered by an email service? For example, I would like to know which authentication is used by my school's email service https://uofu.service-now.com/cf/kb_view ... =KB0000509.

You can query the server for preferred authentication methods when you create an account. I'm not sure it actually lists them, though.
