According to the wiki page, Dolphin can show details of files such as:

Size
Date
Permissions
Owner
Group
Type
Link Destination
Path

I want to show the link count too.

By "link count" I mean the value that is shown by the ls -l command. (Actuallly, it would be really great if I could show number of hardlinks separately from symlinks, but that may be beyond the scope of this question.)

I assume this requires some customization, such as a script. I'm not a KDE developer. (Not even close!) But I'm hoping there's a relatively simple way to achieve my goals. Any suggestions?

Right click on the desired file, select "Properties", go to the "Information" tab, click on the "Configure" link at the bottom and select what you want. Alternatively, right-click on the "Information" panel to have a similar dialog. If what you want is not there, then I fear that the feature is not implemented yet.
