I have a folder I need to access from time to time in Dolphin called "core" that is automatically displayed using the "program crash data" icon instead of the folder icon. It's not a show stopper, but I do find it fairly distracting. Is there a way to override the behavior?

Right click on the folder icon and choose another one?
Running Kubuntu 22.10 with Plasma 5.26.3, Frameworks 5.100.0, Qt 5.15.6, kernel 5.19.0-23 on Ryzen 5 4600H, AMD Renoir, X11
FWIW: it's always useful to state the exact Plasma version (+ distribution) when asking questions, makes it easier to help ... |

I've actually tried that -- it doesn't let me change the icon. Is this perhaps hard wired into Dolphin?
Ahh... I did forget to mention that this folder is being accessed over a kioslave (ssh / fish). |

right, try changing it locally, I don't think you can do this remotely
