What exactly does the Memory Usage option do?

Under the Advanced tab in Preferences there is an option called Memory Usage. What are the benefits of setting it to medium or high? I wish you inserted a better description in the menu...

IIRC it affects the size of the chunks stored in RAM while in-transit, and trades more RAM consumption for lower disk IO load?
