Would it be possible to change the epub back end to maybe the backend used in qt based calibre, or maybe epub. Js, though I know it's still in development. I'm not a coder unfortunately just a consumer, so ignore me if this is at all ridiculous.

I don't think that sounds rediculous. I'd suggest submitting a case to bugs.kde.org or posting your question to the okular-devel mailing list.
