Is there a rotoscoping or feature to cut out people in Kdenlive? I'd like an easyish way to be able to just select the person and delete the rest of the video. Kind of like a green screen without using a green screen.

Yes, use the Rotoscoping effect from the effects list. It is in section Alpha, Mask and Keying. Easiest is to search for it.
