If it was possible to change the tone while painting with the pen tablet at the same time, it would allow me to create better gradients/transitions.

The idea is I could select a very light grey, and while I am laying it down then lower the value of that grey and paint with darker grey, and continue until it's black. This would allow me to create a much more smooth gradient using krita. This is because my pen pad seems to act like it only has about 6 pressure points. (huion H610 Pro).

Yes, go to the brush settings(f5), select a brush in the pixel brush engine, and toggle 'value'. That will set pressure to change the value. MOre examples can be seen here: https://docs.krita.org/Brush-tips:Fur

I just learned that human's have a limit on their motor skills giving only about 6 or 8 values.
But what I am trying to suggest, is I can press a button on the keyboard and change the value of the color, while at the same time using stylus pressure. This would allow me to have more than 6 or 8 values.

I wanted to comment on this topic and replay that I started. I discovered that not applying the full strength of the brush when drawing the color (grey), looks a little bit off when using a color or multiply layer.

I now know that what should be done is using on screen mixing while applying full strength. Using pressure sensitivity for mixing. My gredient rendering looked much better after doing that. I missed this in the tutorials I watched, I do not think it has been explained, maybe it was just my own invention. I used to draw with a 2B school pencil and make smooth gradients when doing shadows. I tried to use the stylus the same way, it failed.

I also want to say, that the accuracy is also better when painting this way.

Glad you found a way that works for you. But just to mention, you can turn the selected color darker and lighter with the K and L key respectively.
You can also alter the saturation, blue vs yellow and red vs green color balance, but those don't have a default shortcut associated, you need to add your own.
