Hello!
It is not possible for me to set my virtual desktops individually.
Under KDE 4:14 it went very well under KDE 5 no longer.

I want to put on every desktop a specially wallpaper and its own programs. For example, Music: An instrument as wallpaper and corresponding program as Lilypond or Audacity on the work surface.

It is also strange that I only have 2 choices, a folder view and a work surface.

Why were all of these venues or I can choose to have them still?

for different wallpapers use activities instead of virtual desktops, though it appears there is work being done to bring it back https://bugs.kde.org/show_bug.cgi?id=341143#c167

per the aforementioned bug report the grid desktop appears to be being worked on
