While I'm not entirely sure what combination of factors is resulting in black-on-black menus, I do know that electron apps follow the GTK theme which can be configured under System Settings -> Application Style -> GNOME Application Style (GTK). I'd expect that selecting a dark GTK(3?) theme ought to resolve the problem. You may need to restart the app after changing the style for the new theme to fully take effect.
