Is there a way to 'lock' packages (prevent updates and the installation of alternate versions) in 'Discover'?

Probably the best way is to unchecked archive.neon.kde.org/user/bionic in repositories.

I don't use Discover, but instead plain old apt. At one point I also wanted to "lock" certain packages so I looked up the way to do it for apt, and stumbled upon this answer in AskUbuntu: https://askubuntu.com/a/18656/847385.
The answer listed ways to do it with dpkg, apt, aptitude, etc. I'm not 100% sure, but I'd think Discover would also use dpkg in the background anyway, so it might just work.

Discover does not have a way to do this, as it is not a package manager, but an actual one such as Synaptic or Muon will be able to.
