Make sure you follow all the instructions, using info for Ubuntu 20.04, and also specifically to remove all existing wine packages from your system.
You will need to use Muon/Synaptic, or the command line to do so.

This is exactly the guide I followed. I even purged the default wine 5.0 from the system. What else can I do to clean out old wine?

Resolved. Was a repo issue. Needed to remove some and leave only the focal one.
