When a window is minimized it's label in task manager is shaded (without colour). How can I turn this feature off?

I'm afraid it is unlikely you can disable this behaviour. You can however switch to an alternative task manager applet such as IconTasks - although this is icon centric, there are likely other more traditional task manager applet versions available as well.
