Is there a way I can make dolphin auto refresh the folder I am in so it displays new files that are added right away? As is I have to reload dolphin altogether to make a new folder that gets added show up...

If you are using a 2.6.31 Linux kernel, then this is a known bug in inotify, which monitors changes in files and folders in the kernel, and informs applications when that occurs.
Unfortunately I do not think a solution is available at this time.

Jeff91: While you're waiting for the fix to come through, you don't need to reload. Just use F5 to refresh.

This problem continue in stable Debian 5.10.0-19-amd64 with stable KDE 5.20.5 and Dolphin 20.12.2 .
Reproduce issue: Open $HOME/Downloads folder in Dolphin. Run in terminal: cd $HOME/Downloads;touch b # Check if file "b" appeared. Maybe it did, run: pkill dolphin;dolphin & touch c c file appeared in Dolphin or F5 is needed? When one do F5, Dolphin may start showing new files immediately, but for how long? When i kill Dolphin and start it, it does not update folder view again. I have found similar issues closed. Anyone found issue for it, or can do something about it?
I hate outdated KDE bug tracking system, i like Gitlab.
