often when copying a large folder I only want to copy new or modified files, like when making a quick backup copy to my USB flash drive. Currently I'm doing this manually by calling "cp -ru <source> <destination>" on the console.

Is it possible to do this from the gui (i.e. with Dolphin)? It only offers me "overwrite" or "skip", there is no such option as "overwrite if newer" or the like.

I suggest you make a feature request at bugs.kde.org as this feature doesn't exist at this time, even in Trunk.
