I'm using the KDE 4.7.4 with Kubuntu 11.10.

Is there a way yet to turn off folder previews, on mouseover, in dolphin?

It looks very impressive when you are checking out the KDE, but when you are actually doing work it becomes yet another annoying pop-up while you are trying to think.

I went to Dolphin > Settings > Configure Dolphin > General > Previews and deselected everything, but no joy.

Thanks much in advance

Yes you can disable them. Open Dolphin > Settings > Configure Dolphin > General > Behaviour. Untick "Show tooltips".
