I get my cash money from an ATM (Geldautomat). Every week or so I withdraw 100 Eur and spent for various things. If I want to categorize these spending, how to do that? Just take an arbitrary ATM withdrawal and split that? Of course you never know from with ATM withdrawal your spend money actually was...

You can account for all your cash spendings using a cash account. In this case the withdrawal would just be a transfer from you bank account to you cash account. After that you can record your cash spending in that account.
