You can't add "Search in Files" to the toolbar.
There should be a way to add this action to the toolbar.

"Search and Replace" is a tool you can activate in · Settings > Configure Kate > Plugins
Once you activate it, you can find it in the Edit menu, but it's not called "Search and Replace", it's "Search in Files".
This option should have the same name in both places.
