If we have many assigns for one filetype we should to have choose which apps we can use with that filetype

It is possible with a right click... What seems to be missing is the ability to easily change the default. This lives in System settings-> Advanced -> File associations and to use it you have to know the mime type of your file.

There should be direct access to this setting from the right-click menu IMHO.

Indeed, it has been already implemented by David Faure, with some layout suggestions from our own Hans.
