Is there a way to automatically subscribe to any thread in which I post/create? And if so, how do I change the frequency of when I reeive the emails about it?

user control panel -> board preferences -> edit posting defaults -> Notify me upon replies by default -> yes
afaik no way to change the frequency of email notifications
