Currently* selected menu item is just a little darker than normal item color. It is chosen automatically I presume. I'd like to specify colors by hand (text and background) for better contrast but there doesn't seem to be any option for this**. If this is possible to implement I think it would be good to do so.
* I'm using Oxygen style and KDE 4.2. ** At least I could find any.

With Oxygen style it is not possible, but you can use QtCurve instead.

in appearance - colors see if there is option to customize this highlight color
it may be same as selected items / selection color |
